Salted butter caramel cobblestone from Cinacia
With this creation, Sigôji revisits salted butter caramel with subtlety and delicacy. The milk chocolate from Cameroon and the Guérande fleur de sel on top delight both gourmands and gourmets. The reputation of Guérande salt is well-established and the greatest chefs swear by it. The quality of the fleur de sel, which floats on the surface of the salt marshes, is exceptional and contributes to making this Sourire de Rochefort a delight. The discovery of Rochefort had a great impact on Euphrasie Mbamba. The creation of this nugget was inspired by the logo of the Festival du Rire ; she chose to name it " Sourire de Rochefort ". It is also a tribute to the city in which she set up her factory.
Cinacien caramel and vanilla paving stone from Madagascar
What could be more African than cocoa beans and vanilla from Madagascar ? What could be more Belgian than Trappist ? Sigôji has therefore subtly mixed all these ingredients to create a unique chocolate . Euphrasie Mbamba has always wanted to marry Belgian and African flavors. It was in this spirit that she had the idea of creating an infusion of Trappist marc (the remains of cereals used in the manufacture of beer) to infuse the vanilla. On top of the intense dark chocolate (68% cocoa), muscovado sugar completes the festival of flavors that this creation represents.
Sigoji, a committed chocolate factory
Sigoji is actively involved in the Club des Chocolatiers Engagés . The goal of this association of chocolate enthusiasts: to allow cocoa bean farmers to receive fair compensation for their work. The quality of the chocolate also depends on respecting the plantations. The chocolatiers who are members of this association therefore undertake to use only cocoa beans whose production is guaranteed to be pesticide-free . In addition, the beans are only harvested when fully ripe . Choosing Sigôji therefore means choosing a committed chocolate.
